What is an Emulsion?
An emulsion is a mixture of two or more immiscible liquids – one being oil based and the other water based, or “aqueous.” They are described as “immiscible” liquids because they cannot easily be mixed together without separating.
Simple emulsions are either oil dispersed in an aqueous phase or water dispersed in oil.
To create a stable emulsion and stop your emulsion from separating, you need to add an emulsifier. An emulsifier has a hydrophilic (water liking) end and a lipophilic (oil liking) end. The hydrophilic end is attracted to the aqueous phase and lipophilic end to the oil phase, and this binds them together.
You also need something that can impart a large amount of energy, like a high shear rotor/stator mixer. Unlike a conventional agitator which just moves the two liquid phases around, the high shear mixer sucks the liquids into the workhead and forces them out through the holes in the stator which reduces them to a fine globule size. After a few minutes of intense highenergy mixing the two phases are finely and uniformly dispersed – and a stable emulsion is formed.

I wanted to make this video for anyone that is confused by the terms that are used in skincare, specifically Korean skincare. I had to do my research to understand the differences between each product and I wanted to share my knowledge. This doesn’t go into details as to what to use per skin type, just the basics. The Food Lab: Emulsions | Serious Eats
A few years back, we raised some money and spent some time asking ourselves, “What would a Food Lab television show look like?” Like the column, the show would strive to communicate complex scientific concepts, and more importantly, show how understanding those concepts can improve your cooking.
We pulled together a production team, and enlisted the help of former Serious Eats intern Katie Quinn to up the oncamera charisma factor, we wrote some scripts, and we shot and edited the episodes.
Then…pretty much nobody saw them. This was our own fault—due to a partnership we made to get the series funded, we were unfortunately required to distribute them behind a paywall. That contract has since ended, and we’re in the clear to do with them as we please. So here we are, releasing them to you onebyone, for free.

How to Make a Stable Emulsion
The key to creating a stable emulsion is obtaining the finest possible droplet size. The more shear energy introduced into the mix, the smaller the suspended droplets will become, creating a fine stable emulsion.
The high shear rotor/stator design of the Silverson mixer is ideally suited to this application and can easily achieve emulsions with a droplet size of 2 to 5 microns. Finer emulsions down to 0.5 microns can be obtained, depending on the formulation. In many cases, this can eliminate the need for high pressure homogenizers.
